What was Rachel Hopkins' maiden name? Who were her parents?

Rachel & Stephen Hopkins were married about 1823 and lived in Hancock County, Tennessee.  It is not known exactly where they were married but it was likely in Hancock County or the surrounding area.  They had 12 children - 2 sons (George & John) and 10 daughters (Susan, Rebecca, Elizabeth, Mary, Catherine, Sally, Eliza, Martha, Calvina & Serena).  They also raised several grandchildren (including Eliza's sons, Jim & Lum).  Between 1861 and 1865, they moved to Harlan County, Kentucky and Rachel died there between 1870 and 1880. Very little else is known about Rachel.  Some researchers list her maiden name as McFarland  and daughter Eliza's death certificate lists it as McFardan but I have no idea who her parents were.  Please e-mail me if you know anything about Rachel.
